Ingredients:

Sweat the onion, pepper, garlic and chilli until softened with the thyme.
Add the chorizo and paprika.
Tip in the rice and stir for 3 mins.
Pour over enough boiling water to cover the rice by about 1 cm.
Bring to the simmer and add the tomatoes and simmer for around 10-12 mins
Add in the fish/shellfish and cook until opaque.
Add peas and remove from heat and allow to stand for 5 mins
Drizzle with olive oil and chopped parsley.
Serve
